I should’ve taken a pic last night as I grilled up a 22oz ribeye. I tried a new-to-me approach; I cooked the edges (and mighty edges they were at nearly 2" thick) in a skillet at medium heat just enough to get a little bit of brown going, then transferred it to the grill at 250°. 20 minutes one side, flip, 20 minutes. It came out so abso-fucking-LUTELY perfectly rare.
